I have always loved roast potatoes, but these roast potatoes are the kind that everyone will remember long after they’ve been eaten. Crispy, salty, moreish deliciousness! This recipe is really easy, and requires you to twice cook the potatoes. Don’t worry though, the steps are incredibly simple - no fancy methods of double-frying or anything like that - they easy enough that anyone can make them.
Feel free to get creative with herbs and spices, or follow my mix to start with. I’ve played around over the last few weeks with different potato sizes and varieties and I think what I’ve landed on is perfect, but if you choose a different type, particularly a smaller variety, just remember to keep an eye on them while cooking so they don’t burn. And remember to set a timer so you don’t miss the mid-cooking step!
